This thread is for sharing the best recipes you have that contain onions.

I am starting with a soup recipe that I got online and have made more than a dozen times now.

It is incredible.

Creamy Vidalia Onion Soup

Ingredients

4 Vidalia onions, thinly sliced
3 tablespoons margarine
1 tablespoon all-purpose flour
1/2 teaspoon salt
2 cups chicken broth
1 cup milk
1/2 cup heavy whipping cream
3 egg yolks, beaten
1 1/2 teaspoons paprika
ground black pepper to taste
1/8 tablespoon hot pepper sauce
2 tablespoons chopped fresh parsley


Directions
1 In a saucepan, melt butter or margarine over medium
heat. Add onions: saute until golden brown, about 10 minutes.
2 Stir in flour and salt, and mix thoroughly. Gradually
add chicken broth, stirring constantly. Cover, and simmer
over low heat for about 10 minutes.
3 When onions are very tender, stir in milk and cream.
Heat through. Remove 1/2 cup soup, and mix in egg yolks.
Slowly stir egg yolk mixture into soup in pan. Heat through,
but do not allow soup to boil. Stir in paprika, black
pepper, and red hot pepper sauce. Serve hot, and garnish with
chopped parsley.

I forgot to add that I make a vegetarian version and carmelize the onions and use either water or veggie broth instead of chicken broth. Instead of the eggs I substitute a teaspoon of cornstarch stirred into a 1/4 cup of very cold milk.

But I made the original version for my parents and they said it tasted just like Outbacks Creamy Onion soup.

This is a wonderful dip that I have taken to parties or just prepared when hubby and I stayed in to watch rented movies.

Beware - it is NOT diet food.

Baked Onion Dip

2 cups sweet onion, (finely chopped0
2 cups mayonnaise (Not Miracle Whip)
2 cups Parmesan cheese (yep, that's not a mistake)


Directions
1 Preheat oven to 350. Prepare a 2 quart baking dish with cooking spray.

2 In a large mixing bowl, combine the mayonnaise, onions and cheese. Pour the mixture into the baking dish and bake for approximately 45 minutes, until the top is slightly brown. Serve hot with buttery, round crackers.

Cherrybomb: You know the good news...those recipes will work nearly 90% or better for Atkins. I'll be trying 'em soon, particularly that onion soup.

;D Badnews: Don't disagree with that at all. Particularly Vidallia onions when they're in season.

Liz: Very well. I'm down a total of almost 85 lbs. My wife is doing pretty good as well, she's down about 45 lbs. (She had far far less to deal with than I did.)

FWIW, there have been some studies coming out recently on it and it appears Atkins and like doctors are more right than wrong.

Hey, I know it's really early to talk about this, but since we're on the subject of vegetables have any of you tried wild spring vegetables? I'm talking specifically about morel mushrooms, ramps and fiddle head ferns.

Anyone?

Errr, maybe this is a new thread in and of itself?


No I haven't, but they sound delicious.

KISS ME NOT SANDWICH

Spread mustard on one slice of bread, onion thinly, cover with another slice of bread. Serve with iced tea before kissing - if you must!

ANOTHER KISS ME NOT SANDWICH
2 slices of wholemeal bread. Spread a layer of peanut butter over one, lay thinly sliced onions on the peanut butter, cover with the second slice of bread.

ANOTHER ANOTHER KISS ME NOT SANDWICH

2 Slices of white bread, spread thick with mayonaise (both sides), Bermuda onion sliced thinly, cover with second slice of bread.

This was kinda "borrowed" from The White Trash Cookbook.

I'm sure there are many of you who will enjoy this.

Take Vidalia onions and hollow them out. Put a beef bullion cube and a big hunk of butter in each one. Wrap tightly in aluminum foil and throw on the cooler part of the BBQ (grill for yanks) for 45 minutes.

If you have any decent bourbon..you can add a shot inside the onion as well.
