I'm having friends over for Christmas Eve dinner, mainly for one friend who has to work Christmas day and doesn't have anyone in her family who will produce a to do for the holidays. This is my menu for that, not for Christmas Day at my mother's where there will be more food than God could eat in a month of Sundays.

Cranberry Brie
Apple/Walnut Salad
Sweet Potato Casserole
Broccoli Rice Casserole
Squash Dressing
Butter Beans
Pecan Pie Cheesecake
Assorted Cookies


And if anyone insists, maybe a ham.

Everyone is welcome. Dinner eightish, but the brie and cookies will be available earlier. Bring your own wine. I drank all of mine. :)

It all sounds delicious Suth, especially the Pecan Pie Cheesecake. Care to share the recipe? I used to make a pumpkin cheesecake for Thanksgiving - a cross between pumpkin pie and cheesecake - if it's anything like that I'm sure it will be yummy.

Here's one way to do it...


Cheesecake Pecan Pie

8 ounces cream cheese, softened
1 egg
1/3 cup sugar
1 teaspoon vanilla
1 9-inch pie shell, unbaked
1 1/2 cups pecan halves
2 eggs, slightly beaten
1/4 cup sugar
2/3 cup corn syrup-light
1/2 teaspoon vanilla

Combine cream cheese, egg, 1/3 cup sugar, and 1 teaspoon vanilla. Beat until
light and fluffy. Spread over bottom of pie shell. Arrange pecans on the cream
cheese mixture. Mix remaining eggs, sugar, corn syrup, and vanilla, stirring
well. Carefully pour over the pecans. Bake at 375 degrees for 40 to 45 minutes
or until done.



Here is another....


1 (2-pound, 4-ounce) package frozen MRS. SMITH’S Special Recipe Southern Pecan Pie
2 cups graham cracker crumbs
1/2 cup DOMINO Granulated Sugar
1/2 cup butter, melted
1/4 teaspoon McCORMICK Gourmet Collection Saigon Cinnamon
2 (8-ounce) packages PHILADELPHIA Cream Cheese, softened
2 large eggs
2/3 cup sour cream
1/2 cup half-and-half
1 teaspoon vanilla extract
1 cup DOMINO 10-X Confectioners Sugar
1 tablespoon all-purpose flour
16 pecan halves

Preheat oven to 325°. Thaw pecan pie according to package directions. Cut evenly into 20 thin slices, keeping wedges intact, and set aside.

Stir together cracker crumbs and next 3 ingredients; press mixture onto bottom and 1 1/2-inches up sides of a 10-inch springform pan.

Arrange 10 pecan pie wedges in a spoke design in prepared pan, placing 1 cut side of each wedge on crust with narrow end towards center of pan. Reserve remaining pecan pie wedges for another use.

Beat cream cheese until smooth; add eggs, 1 at a time, beating until blended after each addition. Add sour cream, half-and-half, and vanilla; beat until blended. Fold in confectioners sugar and flour. Carefully pour cream cheese mixture evenly over pecan pie wedges in pan, making sure wedges remain in place. Arrange pecan halves evenly around edge.

Bake at 325° for 50 minutes. Turn off oven, and let cheesecake stand in oven 1 hour. Remove to a wire rack, and let cool completely. Chill at least 8 hours or overnight before serving.




One is more pie, the other is more cheesecake...whichever you prefer, they are both good.

SAUSAGE AND PEPPERS (more meat)
BACCALA (cured Italian codfish)
SHRIMP COCKTAIL
POTATO SALAD
BROCCOLI AND CHEESE CASSEROLE
and all kinds cookies and treats (peanut butter cookies, oatmeal cookies, texas sheet cake, nut AND apricot kolachi, clothespin cookies.

oh yeah....all kinds of BOOZE too.

Would seven be ok? I'll pitch in with the last minute 'oh-shit!' stuff. If you want wine though, you'll have to tell me what kind. I know jack about it, and I'll either bring something that's garishly overpriced and tastes like shit, or the cheap stuff I really like, and everyone will be duly unimpressed either way. ;)

BTW, Mrs. Sky says she would like the recipe for your broccoli & rice casserole. Our kids all love broccoli. Can ya believe that? :)

Broccoli Rice Casserole

Let's see. You cook the rice, just regular old white rice will do. You stir in frozen broccoli and cream of mushroom soup. It is also quite scrumptuous if you mix Velveeta in with the soup first. But it can be made with or without. If you care to, add other optional ingredients, such as onions, mushrooms, and bell peppers. Put in in the oven and cook it until it is hot, then sprinkle cheese on top and put it back in the oven until the cheese is melted. Sprinkle those crunchy onions thingies on top and put it back in the oven until the crunchy onion thingies are hot.

Oh, it's okay. Don't mind us. Earlier I was pissed at bad for calling me a twit, but I forgave him for that when he called me a twit over something else. So now every thing is all patched up. This is just my normal, everyday bitching. :D
