Anyone heard of a soup called "potage"? Would you share a recipe if you have one?? Or is this one of those weird French Canadian thingies?

basically potatoes, parsley, carrots, celery and herbs(plus garlic and possibly some white wine) and some bacon , onions (fry bacon and onion first and cook the rest with the stock and the veggies and stuff)...along with chicken stock....mix it up and cook it for a coon's age....voila le potage (or is that "la"?)

Thanks! Lucy.. Do you blend or mash it.. or process it?? The potage i had was smooth . i guess maybe the cooking for a coons age does that.

Cut the potatoes in smallish pieces...When cooked they tend to, as you say, mash together a bit naturally...

The secret is in the length of time you cook it--I say about four hours...Also, the herbs and stocks (wine and chicken although I suppose you can have a vegetarian stock but I would go with more celery and onions here and possibly a heavy dash of worstershire or soy).....

Bacon is wonderful for cooking, sad to say....It gives a body to a gumbo or potato based soup which is hard to replace. You might add artificial smoke stuff in the bottle if you don't like the idea of bacon..Do not use artificial bacon bits! They are a disaster!

But, for herbs try rosemary, thyme, a hint of sage and a sprinkle of paprika for a little bite. You can even add a bit of lemon juice or red-wine vinegar for some bite....

LOVE cooking lucy.. but love baking more.. i feed my family and then take the overflow to my folks..lol..

Matter of fact. i have a fridge full of a variety of veggies teetering on the edge of palatability.. I think it'll be potage tomorrow..

Yep..lol.. like poutine.. fries smothered in cheese and gravy.. add ketchup if you are a true canadian.. $ 2.99 heart attack in styrofoam..

Ugh....I didn't actually know what that was when you two were talking about it before. There is a Cajun place here that serves that. Yuck.

I'll tell you one of the things my guy likes (and I'm absolutely convinced he does this simply because it grosses me out).

He likes to eat liverwurst and Miracle Whip sandwiches.

Hey! That's one of my favorite sammiches. Not with the Miracle Whip, mind you because that stuff is just downright nasty. I put mayo and bermuda onions on it.

Not with the Miracle Whip, mind you because that stuff is just downright nasty.

I agree, it is nasty. I've tried to get him to switch to mayo, I've even taken the trouble to make homemade mayo (and what a pain in the ass that was), but he likes his Miracle Whip and won't accept a substitute.

Hey, I never claimed he was perfect. ;D

And I miss it!

I love sushi and sashimi, and the only fish I can get around here fresh is catfish and an occasional bass or trout....

Good in it's own right with a little butter, lemon and fresh dill. Yummy.

Never had catfish though. Is it really "fishy"?

A friend of mine just went down to Cabo San Lucas and went deep sea fishing. They caught a Blue Tuna. They ate it right there on the boat. Saved a little to bring home. After everything was consumed, the captain said "You do know, senor, that I could have sold that fish in Japan for $10,000?"

There ya go for a new business--bring the Japanese in for a live catch and eat on board for the 10 grand....throw in a couple of days/nights seeing the local sights, plus a game of golf and a a little karaoke....

Only problem is that Blue Tuna are extremely rare in Cabo. They are so high in demand that they are being "fished out."
