Ratatouille
2 Tbsp. olive oil
1 large onion, chopped
3 cloves garlic, minced
3 cups eggplant, chopped
3 cups zucchini, chopped
3 tomatoes, chopped
1/2 cup parsley, chopped
1 cup water
Salt and pepper
Heat olive oil in large pot. Cook onion and garlic in olive oil until tender. Add eggplant and simmer for 10 minutes. Add zucchini, tomatoes, parsley and about 1 cup of water.
Add salt and pepper to taste. Simmer on low/medium heat for about 30 minutes until vegetables are tender, stirring frequently. You may need to add just a little more water as the dish cooks down.
I prefer my ratatouille served cold or room temperature. Others prefer it warm with parmesan cheese on top. Some people use this as a spaghetti sauce. Additional way to make this a colorful dish is to add red, yellow and green bell peppers thinly sliced.

I know I would love it. I might even make it this weekend. Plus, you've had me craving eggplant for days because you keep describing all of my favorite food to me.
I'd better eat something before I go to the grocery store this afternoon. Who knows what I'll come home with if I go starving and thinking about your recipes. It could get down right obscene. I'd better set myself a budget here.... :-*

Bump. I've been craving this, but I couldn't remember what it was called. If I ever get up caught up on my paper grading long enough to go to the store, I think I'll make it today.
I've also been craving broccoli cornbread. Does anybody have a good recipe?

Stewed Cane Rat
Skin and eviscerate the rat and split it lengthwise.
Fry until brown in a mixture of butter and peanut oil.
Cover with water, add tomatoes or tomato purée, hot red peppers, and salt.
Simmer the rat until tender and serve with rice

Deep Fried Field Rat
1. Skin and gut the rats, removing the head and toes.
2. Mix garlic, salt, and pepper into a paste, spread on the meat, then place in direct sunlight for 6 to 8 hours, until dry.
3. Fry in deep vegetable oil for about 6-7 minutes, until crispy and yellow in colour.
When the meat is finished cooking, remove the meat and drain all but 1-2
tablespoons of oil from the pan. Add 1-2 tablespoons of flour to the pan
and cook, stirring constantly, until the flour begins to brown a bit. Then
add one cup of milk and simmer until the gravy is thickened to suit you,
salt to taste, and serve.
You're on your own for the biscuits.
