Quick...easy...delicious...cheap...
I don't know whether you have them in your area, but in this area, we have Donut shops that sell home made tamales...yes...at Donut shops...Now, I've made these babies before and they are time intensive and all they are is a bunch of grease and masa (corn flour) and wrapped in corn husks that have been dried. So, eliminate this step. BTW, the Donut shops that have tamales aren't famous for their donuts...go for it anyways...make them happy, buy one or two of their donuts, big spender...
Okay. You don't want Mexican food that night? Freeze 'em. To cook (frozen) put them in a steamer and while cooking your Spanish rice, bring to a boil and go for it for about 30 minutes.
Figure two tamales per person unless you're feeding hogs, then allow three per.
What is missing here? AHA!! Frijoles...not pronounced "free Jolies" but Free Holies. Canned if you haven't been cooking them for a day or so.
Put on plate. Put cheddar cheese everywhere. Eat.
Descrumptious.
I have tried to cook Mexican several times. But I have found the best way to "cook" mexican food is to buy it at this hole in the wall called "Los Panchos" in the next town over. Stuff is cheap and wicked good. cheese enchiladas, rice, beans and chips with bean dip. Wash it down with a corona and toss the paper plates away. Nothing better.

I love Mexican food. One of my favorite things that I make for myself often is spinach quesadillas. I wonder how many Mexicans actually eat that.

In Georgia it's against the law for donuts and tamales to be 'a-mixin'. ::)

i made some killer quesadillas the other day.
smothered 'em with cheddar and monterey jack and topped 'em with hot salsa, sour cream, and guacamole.

I LOVE mescan food,the only thing I like about them beaner bastards. (I'm talkin about illeagles or welfare mescans, now our Mexicans that are American and work, now I like them.I've got a brother in law who is Mexican_American. So don't climb all over my ass for hating MESCANS)I make the BEST fajitias you ever ate!!!! My wife also cooks GOOD enchalidias,tacos, burritos and the chilie rejano. MAN OH MAN, I'm HUNGRY!!!! ;D ;D ;D ;D
I have some Mexican friends, well the mother is from Mexico, the dad is Mexican but from Kansas, and the kids were all born here. I went out dancing with the two daughters one night; we got home at 4:00 drunk off our asses. Their mum woke us up at 7:00 to eat breakfast, which consisted of a delightful smelling soup. She brought me a bowl and put minced onion and lime in it. I proceeded to stir it to mix in the lime and onion. Well I almost puked in the bowl when I realized that there was a large amount of beef tripe floating in the broth.
Now this lady does make the best tamales I've ever eaten.

I didn't need one that morning; I was the real thing. I was able to make it to the loo though, thankfully.
Love GOOD Mexican food. But what passes for Mexican food is pretty sad.
I like Santa Fe style Mexican food over Tex-Mex, just tastes better.
I bought some cookbooks, spices and started making my own. Cheaper and better.
